In between my normal activities this week, prayer meeting this morning, bible study Wednesday, walking, meetings etc, we are preparing for a week away over Easter. We will be away from the shops with a very small fridge in quite warm weather for a week, so it needs some organisation, and baking too. We limit the cakes and biscuits (cookies) we normally keep in the house, but we will be with a group of friends, and we will have morning and afternoon tea and all bring out plates of food.
My speciality is a mango boiled fruitcake which can also be made with pineapple. It has only four main ingredients and is suitable for diabetics. You will notice there is no sugar or butter in the recipe. I have made pikelets a couple of times lately when we were expecting visitors, and will make sure I have the ingredients for them on board.
Mango Fruitcake:
500 grams dried mixed fruit
450 gram can mango in natural juice
Half cup water
Spices to taste eg –cinnamon etc
Simmer for 3 minutes
Add level teaspoon bicarb of soda
It will froth up
Let cool
Add 2 eggs lightly beaten
1 and ½ cups self raising flour
Line pan with baking paper
Bake about one hour in 160C oven
Variations...
Replace some liquid with sherry
Add nuts/ ginger/ mixed peel etc
I have never had a failure with this cake, and it has always been moist.
